Audrey’s chocolate brownies

This is a deliciously simple chocolate brownie recipe from my friend Audrey, one of the best cooks I know, and I am delighted to share it with you. These brownies are also parev so you can serve them as a dessert after a meat meal. They don’t even require actual chocolate – just cocoa powder and a surprise ingredient: orange juice.

Ingredients

Method
  • 5 large free-range eggs
  • 315 g sugar
  • ½ cup oil
  • ½ cup orange juice
  • 5 T cocoa, sifted
  • 150 g cake flour, sifted
  • 1 T potato flour
  • 125 g pecans or walnuts roughly chopped

1. Beat the eggs and sugar until pale, then add the oil and orange juice. Fold in the cocoa, flour and potato flour. Lastly, fold in the nuts.

2. Pour into a well-greased baking tray. Bake for 30 minutes at 160°C.
