Avocado, bacon and watercress salad with horseradish dressing

Ingredients

Method
  • A handful fresh watercress
  • 2 ripe avocados, halved and stoned
  • Olive oil, for drizzling
  • Juice of 1 lemon
  • 80 g bacon, sliced and fried
  • For the dressing, mix:
  • 4 T horseradish sauce
  • Juice of ½ a lemon
  • 2 T white-wine vinegar
  • 1/3 cup olive oil

Arrange the watercress on a serving platter, top with avocado halves and drizzle with olive oil and lemon juice. Scatter over the fried bacon pieces, then dress and serve.
