Baked beans on toast with chorizo

- 2 x 35 g packs Woolworths Spanish chorizo chunks
- 2 T olive oil
- 3 cloves sliced garlic
- ½ t paprika
- 1 dried chilli
- 2 x 410 g cans baked beans
- 30 g coriander
- olive oil, to serve
- lemon juice, to serve
Method
Ingredients
Pan-fry the Woolworths Spanish chorizo chunks in olive oil until crisp, then set aside. Add sliced garlic, paprika and dried chilli to the same pan and fry gently for 1 minute.
Add the baked beans and bring to a simmer. Blend coriander with a little olive oil and a squeeze of lemon juice until smooth.
Season and serve with ciabatta and the chorizo.
