Baked butter beans
Ingredients
Method- 2 x 400 g cans butter beans
- 2 T olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, crushed
- 1 x 400g can diced tomatoes
- a few sprigs fresh rosemary
- sea salt and freshly ground black pepper, to taste
- 4 rounds feta, drained and dried
- toasted ciabatta, for serving
Method
Ingredients1. Preheat the oven to 180°C. Drain the beans and set aside. Gently heat the olive oil in a heavy ovenproof pan. Add the onion and cook gently until softened. Stir in the garlic, tomatoes and rosemary. Simmer uncovered for 5 minutes, or until slightly reduced.
2. Stir in the beans and season. Bake uncovered for 25 minutes, or until hot and slightly crusty.
3. Moisten the feta with a little oil and place on a baking tray lined with foil. Tuck a small sprig rosemary underneath each round and grill until browned and starting to melt.4. Serve the baked beans topped with the grilled feta and toasted ciabatta. Season with pepper and drizzle with olive oil.
