Method- 4 free-range egg yolks
- 4 t sugar
- 4 t Marsala or sweet sherry
Method
IngredientsPlace the ingredients in a clean, metal bowl and cream until smooth.
Place the bowl over a saucepan of simmering water over a low heat and whisk until thick, foamy and tripled in volume, then remove from the heat. Serve warm.
