BBQ-pineapple chicken wings and slaw
Who doesn't love sweet, sticky and spicy wings? Use new Woolworths flavoured sparkling fermented drink to make a thick BBQ marinade to glaze the wings are they bake. Cut the richness of the wings with a crunchy slaw with a secret dressing (it's made with Woolworths granadilla flavoured fermented sparkling drink) and toast to this tropical feast with nostalgic beer floats with a twist.
Ingredients
Method-
For the basting sauce:
- ¼ pineapple, peeled and sliced
- 1 small knob fresh ginger, peeled and sliced
- 1 t garlic, crushed
- 2 whole bird’s-eye chillies
- 1 cup Woolworths original BBQ braai marinade
- ¼ cup olive oil
- 300 ml bottle Woolworths pineapple flavoured sparkling fermented drink
- 560 g chicken wings For the slaw, toss together:
- ½ x 300 g packet Woolworths green slaw
- ½ x 300 g packet Woolworths rainbow slaw
- 1 Granny Smith apple, thinly sliced
- ¼ pineapple, peeled and thinly sliced
- handful fresh mint leaves
- 1 spring onion, sliced For the dressing, whisk together:
- 1 T granadilla pulp
- 1 small knob fresh ginger, peeled and grated
- 2 t Woolworths granadilla flavoured sparkling fermented drink
- 2 T olive oil
- juice and zest of 1 lime
- sea salt and freshly ground black pepper, to taste For the granadilla and ginger floats:
- 1 T granadilla pulp
- 2 scoops Woolworths granadilla sorbet
- 300 ml bottle Woolworths ginger flavoured sparkling fermented drink
- 2 scoops Woolworths Extremely Creamy dairy free vanilla flavoured coconut ice cream
- 300 ml bottle Woolworths granadilla flavoured sparkling fermented drink
Method
Ingredients
1. Preheat the oven to 190ºC.
2. Add all basting sauce ingredients, except the chicken wings, to a pot and bring to a simmer.
3. Remove from heat and allow the sauce to cool before pouring it over the chicken wings arranged on a baking tray.
4. Bake at 190ºC for 35 minutes, basting the wings with the sauce in the baking tray every 10 minutes.
5. Toss the slaw and dressing together in a bowl. Once the wings are cooked, serve with the dressed slaw.
6. To make beer floats, add granadilla pulp and granadilla sorbet to a glass. Top with ginger-flavoured sparkling fermented drink. Repeat steps with coconut ice cream and granadilla-flavoured sparkling fermented drink. Serve.
