Beer-brined ribs

Ingredients

Method
    For the brine, mix:

  • 3 x 330 ml bottles beer
  • 3 T salt
  • 3 T brown sugar
  • 1 T cayenne pepper
  • 2 t freshly ground black pepper
  • 1.5 kg pork or beef ribs
  • 2 cups Woolworths sweet and sticky BBQ marinade
  1. Whisk the brine until the sugar and salt have dissolved.
  2. Place the ribs in a deep baking tray and pour over the brine. Marinate in the fridge for 6 hours.
  3. Remove the ribs from the baking tray and pat dry using kitchen paper.
  4. Generously coat the ribs in the BBQ marinade. Heat a griddle pan until smoking and grill the ribs on both sides.

Cook's note: You can flavour the brine with almost anything. Try adding 4 T curry powder, 2 T cumin and 2 T turmeric, or 2 T adobo sauce for a spicy alternative.
