Ingredients

  • 2 large onion, thinly sliced
  • 6 T olive oil
  • 100 g Woolworths Bombay potato paste
  • 2 large potatoes, peeled and cubed
  • 100 g cauliflower florets, sliced into smaller pieces
  • ½ cup water
  • 8 slices Woolworths sourdough bread
  • 2 T butter
  • Woolworths green mango chutney, for serving
  • Woolworths Bombay ketchup, for serving

Method

Ingredients

1. In a medium pan, sauté the onions in 4 T olive oil until golden and soft. Add the Bombay potato paste and cook for 5 minutes until fragrant. Add the potatoes, cauliflower and water, and simmer over medium heat until the potatoes are tender, about 10 minutes.

2. Gently smash the potatoes and cauliflower, retaining some texture, and spoon onto the slices of sourdough. In a pan, heat the butter with the remaining olive oil, and toast the bread until golden and crispy. Serve hot with green mango chutney and Bombay ketchup.
