Ingredients

- 1 head broccoli, roughly chopped
- 1 T olive oil
- 1 lemon, thinly sliced into wedges For the herb salsa, mix:
- ¼ cup parsley, roughly chopped
- 4 T pecorino cheese, grated
- 1 red bird’s-eye chilli, finely chopped
- 1 T rice vinegar
- 1 T maple syrup
- 1 T olive oil
- sea salt and freshly ground black pepper, to taste
Method

- Preheat the oven to 200°C. Trim the broccoli and wash it thoroughly. Rub lightly with olive oil. Place in a baking tray with the lemon.
- Bake for 40 minutes uncovered, or until golden. Remove from the oven and serve with the herb salsa.
