  • 1 head broccoli, roughly chopped
  • 1 T olive oil
  • 1 lemon, thinly sliced into wedges
  • For the herb salsa, mix:
  • ¼ cup parsley, roughly chopped
  • 4 T pecorino cheese, grated
  • 1 red bird’s-eye chilli, finely chopped
  • 1 T rice vinegar
  • 1 T maple syrup
  • 1 T olive oil
  • sea salt and freshly ground black pepper, to taste

Cooking Instructions

Preheat the oven to 200°C. Trim the broccoli and wash it thoroughly. Rub lightly with olive oil. Place in a baking tray with the lemon.

Bake for 40 minutes uncovered, or until golden. Remove from the oven and serve with the herb salsa.
