Ingredients

Method
  • 400 g good-quality dark chocolate, chopped
  • 500 g butter
  • 700 g brown sugar
  • 8 free-range eggs
  • 55 g cocoa powder
  • 350 g flour, sifted
  • ½ t baking powder
  • For the decoration:

  • 200 g dark chocolate
  • 1 cup cream
  • Cherries, for decorating

Preheat the oven to 160°C. Melt the chocolate and butter together in a bowl suspended over a saucepan of simmering water – the mixture should have a smooth, glossy consistency (take care not to overheat it).
Set aside to cool slightly. In a mixer, cream together the sugar and eggs, then add the cocoa powder, flour and baking powder. Add the chocolate mixture and beat until combined.
Pour the mixture into a greased 25 x 35 cm baking dish and bake for 50 minutes, or until just set but still slightly undercooked (the chocolate will set further when cooling).

To make the decoration: In a bowl suspended over a saucepan of simmering water, melt the chocolate, then whisk in the cream until smooth. Pipe a word of your choice over the brownie and decorate with chocolatedipped cherries.

    This recipe is a massive favourite in my house, basically it ‘s this or Malva Pudding!

    For total decadence, use all of the chocolate in the recipe, but you don’t really need the additional 200g choc or cream or cherries for decoration. Can also crumble a flake over or just take a white choc and make choc curls to decorate. It’s a really delicious, moist cake even without.
