Chai masala banana loaf

Banana loaf without eggs? This is it, folks. The banana acts as the raising agent and adds the flavour we all know and love. I have added chai spice flavours for warmth and fragrance.

- 3 large bananas
- ¼ cup + 1 T canola oil
- 120 g brown sugar
- 225 g self-raising flour
- 1 T chai masala
- 2 t baking powder For the chai masala, blend:
- 1 star anise
- 2 black peppercorns
- 1 cardamom pod, crushed
- 4 cloves
- ½ t ground cinnamon
- ¼ t ground nutmeg
Method
Ingredients
1. Preheat the oven to 180℃. Grease and line a XX cm loaf tin with baking paper.
2. Combine the bananas, oil and sugar and blend or mix until smooth. Sift in the flour, chai masala and baking powder and fold into the banana mixture.
3. Transfer the batter to the lined loaf tin and bake for 40-45 minutes, or until a toothpick comes out mostly clean.
4. Remove the banana bread from the oven and allow to cool in the tin for 10 minutes, then carefully transfer it to a wire rack to cool completely.
