Choc-chip-and-caramel ice-cream sandwiches

Motheba Maketha's easy ice-cream sandwiches are a great treat with a caramel filling that offer a balanced sweet and creamy taste to these sandwiches.

Ingredients

Method
  • 188 g flour
  • 1 t bicarbonate of soda
  • 1 t ground cinnamon
  • ½ t salt
  • 220 g brown sugar
  • 50 g white sugar
  • 227 g unsalted butter
  • 2 t vanilla extract
  • 2 free-range eggs
  • 243 g oats
  • 360 g Woolworths 27 % cocoa milk chocolate drops
  • Woolworths chocolate dairy ice cream, for serving
  • Woolworths Fantastical multi-coloured egg milk chocolate bites, crushed, for serving
  • For the filling, mix:
  • ½ t salt
  • 1 x 360 g can Caramel Treat

1. Preheat the oven to 170°C. Sift all the dry ingredients into a bowl, then set aside. Beat the sugar and butter until light and fluffy. Add the vanilla and eggs and mix until well combined.

2. Fold the dry ingredients into the butter mixture, then add the oats and chocolate chips. Allow batter to rest for 1 hour before baking.

3. Weigh out 40 g portions of dough, shape into rounds, then pipe or spoon 1 T Caramel Treat into the centre of each round. Roll the Caramel Treat into the centre of cookie dough before baking. Place on a baking tray and bake for 10–12 minutes.

4. To make the ice-cream sandwiches, place 1–2 scoops ice cream on top of a cookie. Top with a second cookie, squeeze together to form a sandwich, then roll the edge in the crushed Fantastical chocolate bites.
