- 150 g rolled oats
- 1 litre coconut milk
- 1 t ground cinnamon
- ¼ t ground nutmeg
- 1 t sea salt
- 1 vanilla pod, seeded
- 4 T Muscovado sugar
- 1 green apple, cut into matchsticks
Method

- In a medium saucepan, combine the oats, coconut milk, cinnamon, nutmeg, salt and vanilla seeds. Cook for 10–12 minutes or until the oats are tender.
- Sprinkle with the sugar and top with the apple.
Cook's note: Use coconut ugar if you prefer it to Muscovado
