Citrus-and-ginger self-saucing pudding

Ingredients

Method
  • 290 g self-raising flour
  • 1 t ground ginger
  • 3 T sugar
  • 3 T almond flour
  • zest and juice of 2 ClemenGold® mandarins
  • ½ cup milk
  • 1 free-range egg
  • 1 t vanilla extract
  • 5 T butter, melted
  • 4 T honey
  • 1 Higher Living Organic Ginger Kick Teabag
  • For serving:
  • icing sugar
  • crème fraiche


1. Sift the flour and ginger into a bowl. Stir in the sugar, almond flour and ClemenGold zest.

2. Place the milk, egg, vanilla and butter into a jug and add 1 T of honey. Whisk, then pour into the dry ingredients and whisk until smooth. Pour into a greased 1-litre baking dish.

3. Steep the tea bag in ½ cup hot water for 10 minutes. Remove the tea bag and mix with the ClemenGold juice. Stir in the remaining honey and carefully pour evenly over the batter over the back of a spoon.

4. Bake at 170ºC for 30–35 minutes or until set in the middle. The sauce will be bubbling at the edges.

5. Dust with icing sugar and serve warm with creme fraiche.
