Ostrich steak skewers with satay sauce

1. Heat the olive oil in a pan over a medium heat. Add the mince and cook until browned, continuously breaking up any clumps with a spatula or wooden spoon.
2. Add the spring onion, chilli and garlic, and cook for a further minute.
3. Stir in the soy sauce, poke sauce dip and chilli Szechuan pepper oil.
4. Add the spinach and cook until just wilted. Remove from the heat and cool completely.
5. Briefly soak the rice paper wrappers in a little water, to soften.
6. Place 2 T of the cooled mince mixture in the centre of each prepared wrapper. Add a few carrot ribbons, half a red salad onion and a whole chive.
7. Tuck in the sides, then roll the wrapper away from you to enclose the filling securely.
8. Drizzle 1–2 T sesame oil over the assembled dumplings. Place the dumplings in a preheated air-fryer at 180°C for 8–10 minutes, or until golden and crispy.
9. Make the dipping sauce by mixing the soy sauce, rice wine vinegar, sesame oil, chilli and chives in a small bowl.
10. Serve the crispy dumplings with the dipping sauce and fresh coriander.
