Crispy ostrich mince rice paper dumplings
Ingredients

For the mince filling:
- 4 T olive oil, for frying
- 500 g Woolworths extra-lean ostrich mince
- 1 spring onion, chopped
- 1 red chilli, chopped
- 2 cloves garlic, sliced
- 2 T Woolworths Asian everything soya sauce
- 3 T Woolworths Asian poke sauce dip
- 1 T Woolworths Asian chilli Szechuan pepper oil
- 1 handful baby spinach, chopped For the dumplings:
- 2 x 6 sheet packs Woolworths Asian rice paper wrappers
- 8 baby carrots, shaved into ribbons
- 6 red salad onions, halved
- 2 T Woolworths Asian roasted sesame oil, for air-frying
- 12 fresh chives, whole For the dipping sauce:
- 4 T Woolworths Asian everything soya sauce
- 2 T Woolworths rice wine vinegar
- 2 T Woolworths Asian roasted sesame oil
- 1 red chilli, finely chopped
- 2-3 chives, roughly chopped
- 1 handful fresh coriander, to serve
Method
Ingredients1. Heat the olive oil in a pan over a medium heat. Add the mince and cook until browned, continuously breaking up any clumps with a spatula or wooden spoon.
2. Add the spring onion, chilli and garlic, and cook for a further minute.
3. Stir in the soy sauce, poke sauce dip and chilli Szechuan pepper oil.
4. Add the spinach and cook until just wilted. Remove from the heat and cool completely.
5. Briefly soak the rice paper wrappers in a little water, to soften.
6. Place 2 T of the cooled mince mixture in the centre of each prepared wrapper. Add a few carrot ribbons, half a red salad onion and a whole chive.
7. Tuck in the sides, then roll the wrapper away from you to enclose the filling securely.
8. Drizzle 1–2 T sesame oil over the assembled dumplings. Place the dumplings in a preheated air-fryer at 180°C for 8–10 minutes, or until golden and crispy.
9. Make the dipping sauce by mixing the soy sauce, rice wine vinegar, sesame oil, chilli and chives in a small bowl.
10. Serve the crispy dumplings with the dipping sauce and fresh coriander.
