Denver steak
“This flavoursome cut of meat is found just beneath the shoulder, and is super-tender.”
Ingredients
Method- 400 g Woolworths Angus beef Denver steak, at room temperature
- 2 T butter plus 2 T, softened
- 150 g Woolworths mild vegetable atchar
- 1 head broccoli
- lemon juice a squeeze
- sea salt, to taste
Method
Ingredients1. Rub the steaks with 2 T butter. Cook over hot coals for a few minutes on each side.
2. Mix the remaining butter and atchar.
3. Slice the broccoli into quarters, then braai until tender, about 5 minutes on each side.
4. Heat the atchar butter in a small pan in the coals or on the stove.
5. Slice the steak and place on the broccoli. Spoon over the butter, squeeze over the lemon juice and season with salt.
Cook's note: Cooking times will depend on the thickness of your cut of meat. Always cook from room temperature, make sure the coals are hot, and always rest the meat after cooking. The times below are for a 2.5 cm-thick steak.
RARE: ± 1½,–2 minutes per side
MEDIUM RARE: 2–2½, minutes per side
MEDIUM: 2½,–3 minutes per side
WELL DONE: 4–5 minutes per side
