Ingredients

Method
    Basic spice mix (makes 145 g):

  • 2 T ground cumin
  • 2 T ground coriander
  • 2 T ground turmeric
  • 2 T garlic powder
  • 2 T paprika
  • 2 T cayenne pepper
  • 2 t salt
  • 2 t ground black pepper
  • For the paella

  • 2 T olive oil
  • 1 onion, chopped
  • 1 red pepper, seeded and chopped
  • ½ chorizo sausage
  • 200 g risotto rice
  • 2 T spice mix
  • 1 t Woolworths Cajun seasoning
  • ½ t Woolworths saffron
  • 4 garlic cloves, crushed
  • 400 ml chopped tomatoes
  • 2 T tomato paste
  • 3-4 cups chicken stock
  • 2 skinless free-range chicken breasts
  • 200 g shelled raw prawns
  • 200 g mussels
  • 100 g peas
  • Italian parsley, chopped, for serving
  • lemon wedges, for serving

1 Heat the oil in a large frying or paella pan. Add the onion and slowly cook over a low heat until soft. Add the pepper and chorizo and cook for 3 minutes.
2 Add the rice, spice mix and saffron and cook for 1 minute. Add the garlic, tomatoes, tomato paste and stock. Simmer for 20 minutes or until the rice is just cooked.
3 Add the chicken, cover and simmer for 10 minutes. Add the seafood and cover, cook for 4 minutes. Serve with parsley and lemon wedges.

Cook's note: The basic spice mix is versatile! Add any other Woolworths spices to zhoosh up the flavour. Here, we used Woolworths saffron and cajun seasoning.
