Ingredients

Method
    Basic spice mix (makes 145 g):

  • 2 T ground cumin
  • 2 T ground coriander
  • 2 T ground turmeric
  • 2 T garlic powder
  • 2 T paprika
  • 2 T cayenne pepper
  • 2 t salt
  • 2 t ground black pepper
  • For the nachos:

  • 2 T olive oil 
  • 1 onion, finely chopped 
  • 2 T spice mix 
  • 1 t Woolworths Smoked chilli seasoning Mexican-inspired 
  • 500 g beef mince 
  • 4 garlic cloves, chopped 
  • 400 ml can chopped tomatoes 
  • 2 T tomato paste 
  • 1 cup beef stock 
  • nachos, for serving 
  • grated mozzarella, for serving 
  • salsa, for serving 
  • smoked jalapenos, for serving 
  • guacamole, for serving
  • coriander, for serving 
  • lime wedges, for serving 

1 Mix all the ingredients together. Store in a tightly sealed glass jar.
2 Heat the oil in a large frying pan. Add the onion and cook over a low heat until soft.
3 Add the spice mix and cook for 1 minute. Add the mince and cook for 5 minutes, breaking it up with a wooden spoon.
4 Add the garlic, tomatoes, tomato paste and stock. Cover and simmer for 20 minutes stirring occasionally.
5 Pile the mince onto a platter of nachos and add the remaining ingredients.

Cook's note: The basic spice mix is versatile! Add any other Woolworths spices to zhoosh up the flavour. Here, we used Woolworths Smoked chilli seasoning Mexican-inspired, that can be used in nachos, enchiladas, tacos - you name it!
