• 2 Flavourburst™ Envy™ apples, grated
• 1 T garlic, crushed
• 1 T ginger, finely grated
• ! T honey
• 3 T extra virgin olive oil
• 1 apple cider vinegar
• ¼ t Dijon mustard
• 1 cup lemon juice
• sea salt and freshly ground pepper, to taste

1. Mix all the ingredients and spoon over the salad ingredients.
Cook's note: serve with rocket, crispy fried pork rashers, toasted walnuts, Parmesan shavings and thinly sliced apples.
