Ingredients
Method- 200 g dark chocolate
- 75 g butter
- 4 free range eggs
- 2 T icing sugar
- 1 cup beaten cream
- 200 g strawberries
- 2 T caster sugar
Method
IngredientsMelt the dark chocolate with the butter in a glass bowl over a saucepan of simmering water – making sure not to let the water touch the bowl.
Separate the eggs and beat the egg yolks.
Add the melted chocolate mixture to the beaten egg yolks and stir to combine.
Beat the egg whites and the icing sugar until stiff peaks form.
Fold the beaten cream into the mixture.
When combined add the beaten egg whites to achieve an airy texture.
Spoon into individual moulds and chill in the fridge until set.
Serve with thick cream for the ultimate after dinner treat.
For the strawberries:
Toss the strawberries in with the caster sugar and leave to become sticky and glossy.
Serve chilled mousse with soft whipped cream and sugar glazed strawberries.
