Green goddess bagels

20 minutesThis avocado bagel is quick and easy to make, and utterly delicious. A warm toasted bagel is stuffed with fresh slices of avo and topped with a creamy green goddess dressing. This is ideal for a quick lunch, and you’ll want to double the dressing – it’s great as a dip as well.

For the green goddess dressing:
- 1 avocado, halved
- 2 cloves garlic
- 2 spring onions, chopped
- 2 T parsley
- 3 T dill
- 2 T lemon juice
- 2 T good-quality mayonnaise
- 2 T Woolworths plain double-cream yoghurt
- 2 bagels, sliced and toasted
- 4 T cream cheese
- 1 avocado, sliced
- 4 Woolworths baby gem lettuce leaves
- 1 T Woolworths Everything Bagel seasoning
- salt, to taste
- avocado oil, for serving
Method
Ingredients
1 To make the dressing, scoop the avocado into a blender, then add the remaining ingredients. Blend until smooth.
2 Spread the cream cheese onto the sliced bagels.
3 Top the bottom halves with avocado and lettuce leaves, then drizzle with the dressing.
4 Sprinkle over the bagel seasoning and salt, then drizzle with a little oil.
5 Top with the remaining bagel halves and serve.
Cook’s note: The remaining dressing can be kept covered in the fridge for a couple of days. Great to use as a crudit dip.
