  • Large brown mushrooms
  • Crushed garlic
  • Baby marrow
  • 1 T olive oil
  • Chilli
  • Fresh rocket
  • Parmesan shavings
  • Pine nuts
  • Olive oil
  • Lemon juice

Method

Ingredients

Season large brown mushrooms, scatter with crushed garlic and grill. Pan-fry baby marrow slivers in olive oil with a scattering of dried chilli until just charred.
Toss with fresh rocket, Parmesan shavings, the grilled mushrooms, toasted pine nuts, a drizzle of olive oil and a good squeeze of lemon juice.
