Ingredients
Method- 25 g ground ginger
- 25 g garlic powder
- 20 g dried chilli flakes
- 35 g dried thyme
- 25 g ground cinnamon
- 15 g ground nutmeg
- 15 g ground coriander
- ¼ t cooking salt
- ¼ t freshly ground pepper
- 1 t dried ground prawn/shrimp/crayfish powder (optional)
Method
IngredientsMix all the ingredients together in a bowl. Store in an airtight container in a cool, dark place and use within a few months.
Cook's note: This is a great secret weapon to bring out for marinating meat before grilling, frying, baking or barbequing. It works particularly well with chicken and fish, and you can also add it when you are making Jollof sauce and Jollof.
