Ingredients
Method- 150 g Lurpak® butter
- 1 lemon, sliced
- 1 clove garlic, chopped (optional)
- ½ cup boiling water
- a pinch salt

1. Melt 50 g Lurpak® butter in a small pan over a medium heat. Add the lemon and allow to infuse for 30 seconds. Remove the lemon and set aside. Add the garlic and allow to sizzle for a few seconds.
2. Add the boiling water to the pan and whisk to simmer. Once simmering, add the remaining Lurpak® butter 1 T at a time, whisking, until the Lurpak® butter has melted into the sauce and emulsified; it should thicken and become velvety.
3. Return the lemon to the sauce, add the salt and whisk for a further minute. Serve immediately over pan-fried trout or plump juicy prawns.
