Maple roast brinjal
“This was inspired by one of my favourite Woolworths snacks: soft-eating maple syrup-infused pitted prunes. I decided to blend them with butter, threw a few brinjals on the braai, and the rest was history. Here, I’ve roasted the brinjals in the oven.”- Bianca Strydom
Ingredients
Method- 6 brinjals, peeled
- 2 T olive oil
- sea salt and freshly ground black pepper, to taste
- maple syrup, for serving
- chives, chopped, to garnish For the smoked butter:
- 100 g butter
- 3 drops Woolworths smoke extract
- 250 g maple syrup
- salt, to taste
Method
Ingredients1. Preheat the oven to 180°C. Place the brinjals on a tray and cover with olive oil, salt and pepper. Roast, covered, for 30 minutes, or until tender.
2. Meanwhile, blend the ingredients for the smoked butter until smooth.
3. When the brinjals are tender, make an incision into them and stuff with the butter. Roast for a further 20 minutes, or until the prunes become sticky. Serve with more maple syrup and garnish with chives.
Cook's note: Cook the brinjal in the air-fryer at 180°C for 20 minutes, or until the butter is caramelised. Use this sweet butter as a special sauce for your favourite vegetables. It works especially well with butternut and sweet potatoes, or even to top spicy rice or spuds.
