Flapjacks with cookie butter

What is cookie butter? It’s a smooth, pourable spread made from blended biscuits, and in this instance, ideal milk, butter, sugar, lemon juice and cinnamon. Try it on pancakes, on ice cream, slattered on biscuits. It honestly is life-changing – if decadent!
Ingredients
Method- 150 g ginger biscuits
- 3 T brown sugar
- 2 t butter, melted
- ½– ¾ cup Ideal milk or cream
- a squeeze lemon juice
- ¼ t ground cinnamon
- Woolworths ready-made pancakes, heated, for serving
Method
Ingredients1. Place all of the cookie butter ingredients in a Nutribullet or blender and blend. If it needs more liquid, add a little more ideal milk or cream until smooth and pourable.
2. Smear over the pancakes to serve.
Cook's note: For a slightly thicker consistency, avoid melting the butter, and blend with a little warm water to reach the desired consistency.
