Ingredients
Method- 100 g grated Parmesan
- 50 g breadcrumbs
- 4 free-range chicken breasts
- 1 beaten freerange egg
- 1 T olive oil
- Cucumber
- Chilli
- Rice wine vinegar
Method
IngredientsCombine grated Parmesan with breadcrumbs. Using a rolling pin, flatten free-range chicken breasts between two sheets of cling film.
Dip into beaten freerange egg before coating in the Parmesan breadcrumbs. Fry in a hot pan with olive oil for 2 to 4 minutes on each side, until crisp and golden.
Remove and drain on kitchen paper. Serve hot with a cucumber-and-chilli salad tossed in rice wine vinegar.
