- Spanspek
- Sweet melon
- Steamed prawns
- Crumbled feta
- 1 onion
- 1/3 cup verjuice
- 1 T pomegranate glaze
- Chopped coriander
- Pitta wedges
Method
IngredientsToss slices of watermelon, spanspek and sweet melon with steamed prawns and crumbled feta.
Slice onion into thin wedges, place to a small saucepan along with verjuice and pomegranate glaze and simmer gently for 5 to 10 minutes or until the flavours have infused.
Arrange over the salad and drizzle with remaining pan juices.
Scatter with chopped coriander, season to taste and serve with toasted pitta wedges.
