“I love a lemon poppy seed moment. Especially when it’s adding to something I really love, like this amasi cheese. Here, we served it up with my giant bagel, but you can also smear it thickly on toast or eat it dolloped onto a fruit salad.” – Khanya Mzongwana

Ingredients

Method
  • 4 litres Woolworths maas
  • 2 T poppy seeds
  • salt a pinch
  • 1 lemon, zested
  • 10 g thyme, leaves picked
  • 4 T icing sugar

1. Mix all the ingredients well. Pour the mixture into a muslin cloth and knot together he corners. Place in a colander over a bowl. Place a heavy plate on top to squeeze out the whey quicker and chill overnight.

2. Unwrap the next day and serve with bread, fruit and cheese.
