Pork escalope with apple kimchi

Ingredients
Method-
For the pork
- 400 g pork fillet
- 2 T ginger, finely grated
- 6 cloves garlic, crushed
- 1 T brown sugar
- 4 T soya sauce
- Oil, for frying For the apple kimchi, mix:
- ½ medium red cabbage, finely sliced
- ½ cucumber, finely sliced
- 4 red spring onions, finely sliced
- 2 Granny Smith apples, cut into matchsticks
- 4 radishes, finely sliced
- 2 T Woolworths Mamma O’s Premium Super Spicy Pepper Paste
- 2 limes, juiced
- 1 T coriander, roughly chopped
Method
Ingredients- Slice the pork fillet into 4 pieces and place a piece between 2 sheets of clingwrap. Using a mallet or rolling pin, bash to a thickness of 5 cm. Repeat with the remaining pork.
- Combine the remaining ingredients and marinate the pork in the mixture for 10 minutes.
- Heat a little oil in a non-stick frying pan over a medium to high heat. Pan-fry the pork until golden and cooked through. Serve with the apple kimchi. (Or try this easy kimchi recipe.)
What stores in Cape Town carry the Woolworths Mamma O’s Premium Super Spicy Pepper Paste? I have only looked in Hout Bay and they don’t seem to stock it.
