Radicchio with “Mostorda di frutta” and prosciutto

Ingredients

Method
  • 6 firm guavas, peeled
  • 6 slices of prosciutto
  • Radicchio
  • For the syrup:

  • 1 cup water
  • 1 cup sugar
  • 1 cup red wine vinegar
  • 1 tablespoon mustard seeds
  • 1 Thai chilli, halved
  • 2 bay leaves
  • 1 teaspoon salt
  • 1 star anise

Method

Ingredients

To make the syrup: Place all the ingredients in pot and bring to a boil, reduce heat and simmer for 30 minutes until syrupy. Add guavas and  simmer for 10 minutes or until soft, but not falling apart.
Remove from heat and cool down. Serve whole guavas, wrapped with prosciutto in radicchio in individual bowls. Drizzle syrup over.
Serve as a starter with crisp bread.
Note: “Mostorda di frutta” is basically a fruit relish with mustard.
