Red wine poached pears
As the festive season rolls in, there's nothing quite like indulging in the sweet delight of wine-poached pears, perfectly infused with warm spices such as cloves, anise cinnamon, and nutmeg. These luscious pears pair beautifully with the rich, earthy notes of Seriously Old Dirt by Vilafonté. Ingredients
Method- 12 pears, peeled with stems intact
- 750 ml Seriously Old Dirt wine by Vilafonté
- 200 g sugar
- 2 cinnamon sticks
- 2 star anise
- 1 orange, peel cut into strips
- 3 cardamom pods, crushed
- 2 cloves
- 2 t allspice berries
- Woolworths strawberries & cream flavoured dairy ice cream, for serving
Method
Ingredients1. Place the pears into a large saucepan with the wine, sugar, spices and orange peel. Cover the pears with a piece of greaseproof paper and simmer for 30 minutes.
2. Add the cherries, then allow to stand overnight so they stain the pears.
3. When ready to serve, remove the pears and reduce the liquid by half. Add the pears and serve with the cream.
