A fresh, vibrant dish – add rice noodles to for something more substantial.

For the dressing, mix:
- 1/2 cup coconut milk
- 1 red chilli, chopped
- 1 t ginger chopped
- 1 t garlic chopped
- fresh coriander, to garnish
- basil leaves, to garnish
- mint leaves, to garnish
- lime wedges, to garnish
- 1 x 270 g pack Woolworths PlantLove silken tofu
Method
Ingredients
1. Make the dressing, then cut the tofu into cubes and place on a platter.
2. Pour over the dressing, then garnish with coriander, basil, mint and lime wedges.
