Giant éclair

1. Fry 500 g beef mince in olive oil until well browned. Add 3 cloves chopped garlic, 2 T lime juice, 1 T fish sauce and 3 T sweet chilli sauce.
2. Stir in 3 t finely chopped mint and 3 t chopped coriander.
3. Serve with wraps, cucumber, spring onions and crisp greens.
