Stracciatella ice-cream sandwiches

Dairy Dream stracciatella dairy ice cream and choc-oat snaps – that's all you need for a dessert the kids will love as much as the adults. Spoon the ice cream onto a choc-oat snap, top with another cookie, then roll the sandwich in flaked almonds or grated chocolate for a sweet treat that looks as good as it tastes.

  • 6 scoops Woolworths Dairy Dream stracciatella ice cream
  • 1 x 250 g Woolworths choc-oat snaps
  • 50 g almond flakes, toasted and chopped
  • 50 g dark chocolate, finely grated

Method

Ingredients
  1. Soften the ice cream slightly, then place a scoop of ice cream on a biscuit. Top with another biscuit. Repeat to make 6 sandwiches, then freeze on a baking tray for 30–45 minutes.
  2. Just before serving, roll half the ice-cream sandwiches in the flaked almonds and the other half in the grated chocolate.
