Romesco-style stuffed peppers

This Tenderstem broccoli soup is rounded out with potato and spiked with blue cheese for extra flavour. Convert any broccoli hater with this easy soup.
1. Soften the chopped onion and cloves of crushed garlic in olive oil for 5 minutes.
2. Add the peeled and chopped potatoes and sauté for a further 5 minutes, then add the warm vegetable stock. Season to taste.
3. Simmer until tender, remove from the heat and add the chopped Tenderstem broccoli. Cover and steam until the broccoli is tender.
4. Place the mixture in a blender and blend with De Leeuwen blue cheese and cream. Place the soup in a clean saucepan and bring to a simmer to reheat.
5. Serve warm topped with extra blanched broccoli, crumbled blue cheese and a drizzle of olive oil.
Cook's note: Tenderstem broccoli, exclusive to Woolies, is sweet and tender from stem to floret and 100% locally grown. A hybrid between Chinese kale and ordinary broccoli, it has a mild flavour similar to asparagus and really doesn’t need much in the way of cooking.
