Ingredients
Method- 1 T vegetable oil
- 90 g Woolworths Hot and Sour paste
- 400 ml can coconut milk
- ½ shallot, chopped
- 150 g exotic mushrooms
- 100 g rosa tomatoes, halved
- 1 t Fish sauce
- fresh coriander, to serve
- spring onion, sliced, to serve
- lime wedges, to serve
- fresh chilli, chopped (optional)
Method
Ingredients1. Add oil and Woolworths Hot and Sour paste to a medium-sized saucepan. Turn the heat to medium-low and bring to a gentle simmer.
2. Add coconut milk and bring to a gentle simmer.
3. Add shallot and exotic mushrooms, slicing the shiitake and king oyster mushrooms and breaking the shimeji mushrooms apart. Add tomatoes and simmer for 5 minutes. If desired, season to taste with fish sauce.
4. To serve, divide between 2–4 bowls and garnish with fresh coriander, sliced spring onion and lime. For an extra kick of heat, add freshly chopped chilli.
