Tropical chia breakfast bowl

Ingredients

Method
  • 1 cup coconut milk
  • ¼ cup chia seeds
  • 2 t honey
  • 1 t vanilla extract
  • a pinch of salt
  • Zespri Vita SunGold™ kiwi fruit, for serving
  • coconut yoghurt, for serving
  • toasted coconut flakes, for serving
  • pistachios, for serving
  • 1 T nut butter
  • 1 T granadilla pulp
  • freshly grated coconut, for serving (optional)
  • a drizzle of honey (optional)

1. Pour coconut milk over seeds.

2. Add honey, vanilla extract and a pinch of salt. Mix well and refrigerate for 2 hours or overnight.

3. Top with slices of peeled Zespri Vita SunGold™ kiwi fruit, a scoop of coconut yoghurt, or Woolworths cultured coconut, toasted coconut flakes, pistachios, a teaspoon of nut butter,  granadilla pulp, freshly grated coconut and a drizzle of honey (optional). Dig in!
