Umleqwa with lentils

“When I first bought umleqwa at Woolies, I was curious to see how it would stack up against what I grew up eating. I cooked it as in the recipe below and it still tastes so clean and savoury and rich, my mouth is watering just describing it! Try it served with mash, although pap is always the best option IMO.”

Ingredients

Method
  • 4 T canola oil
  • 1 Woolworths umleqwa, jointed
  • 1 onion, roughly chopped
  • 1 x 400 g can lentils, drained
  • 1 T paprika
  • 1 cup chicken stock
  • 2 t salt (if using chicken stock powder, you can omit the salt)
  • mashed potatoes or pap, for serving

Method

Ingredients

1. Heat the oil in a large pan and fry the umleqwa until browned.

2. Heat more oil in a separate pan and fry the onion until softened and slightly caramelised. Add the lentils and paprika and fry a few more minutes.

3. Add the browned umleqwa and chicken stock. Simmer a few minutes before serving with pap or whatever your heart desires.
