Method- 2 brinjals
- 4 quartered tomatoes
- 1 chilli
- 3 cloves chopped garlic
- Olive oil
- Toasted almonds
- Coriander pesto
Method
IngredientsPreheat the oven to 180°C.
Roast brinjals and quartered tomatoes with chilli, cloves chopped garlic and a little olive oil.
Serve with toasted almonds and a drizzle of coriander pesto.
