Ingredients
Method- 2 butternuts, whole
- Olive oil
- 3 tablespoons brown sugar
- Cinnamon
- 6-8 whole figs,peeled
- Salt and freshly cracked black pepper
- Fresh Parmesan cheese
Method
IngredientsPreheat oven to 180°C.
Slice butternuts into 1cm slices, peel and pips intact. Place on baking tray.
Drizzle with olive oil, sprinkle with cinnamon and brown sugar and season with salt and black pepper.
Bake in for 10 – 15 mins until golden brown.
Remove baking tray from oven and add figs.
Drizzle with pan juices, and return to oven for 5 mins.
Remove, arrange on a platter and top with Parmesan shavings.
