White chocolate mousse with fresh summer berries

Ingredients
Method- 200 g good-quality white chocolate
- 1 vanilla pod, split and seeds scraped out
- 1½ cups fresh cream
- 100 g fresh strawberries
- 100 g fresh blueberries
- crunchy granola bar crushed, to serve
Method
IngredientsBreak the chocolate into pieces and place in a heatproof bowl along with the vanilla seeds and 3 T cream.
Melt over a saucepan of barely simmering water.
Whip the remaining cream until soft peaks form.
Allow the chocolate mixture to cool slightly before folding in the whipped cream, a little at a time.
Spoon into glasses and chill until ready to serve.
Serve with summer berries and crushed crunchy granola.
