Yellow watermelon-and-grilled halloumi salad

10 minutesYellow watermelon and grilled halloumi bring a sweet and salty contrast, while spicy harissa ties it all together. Add cool cucumber, ripe tomatoes and lightly pickled red onions, and you have summer on a plate!

- halloumi 320 g, cut into rough chunks
- olive oil 2 T, for drizzling
- Woolworths spicy harissa red pepper paste 3 T
- sea salt and freshly ground black pepper, to taste
- lemon 1, juiced
- Woolworths yellow watermelon 1/2, peeled and roughly chopped
- English cucumber 1, roughly chopped
- Woolworths yellow and green exotic tomatoes 100 g, roughly chopped
- small red onion 1, finely sliced marinated ¼ cup red wine vinegar
- olive oil, for drizzling
- fresh dill 1 a handful, roughly chopped
Method
Ingredients
1 Coat the halloumi in 1 T olive oil and 1 T harissa paste, season with salt, then pan-fry in a hot cast-iron pan until golden and crisp on both sides. Mix the remaining olive oil and harissa with the lemon juice and set aside.
2 Toss the salad ingredients together, season to taste and serve with the hot halloumi. Top with the harissa dressing.
