Watch: Double-cheese and mushroom pizza

Warm the oven to 220°C. Take 6-8 big brown mushrooms, drizzle with olive oil, sprinkle with sea salt, scatter with fresh thyme and bake for 5-10 minutes. For a super easy pizza base, combine 240 g flour and 1 cup double-thick plain yoghurt and knead until a soft dough is formed. Roll out on a floured surface. Brush with olive oil and sprinkle with 1 crushed garlic clove and 1 sliced chilli. Top with 160 g grated mozzarella, 200 g blue cheese and the brown mushrooms. Place the pizza on a baking tray and bake for 10 minutes at 220°C until golden and cooked through. Top with fresh rocket and enjoy.
