6 exciting salads to try this summer
In summer, we crave something quick, easy and light for dinner. Salads may seem like a boring choice, but it’s all about what you put in them. Hannah Lewry has created 6 interesting and substantial salads that you’ll love. Which one will you try first?
1. Baby marrow fritter bowl
The base of this substantial salad is baby marrow fritters. You can prepare the batter for the fritters in advance or make them early and reheat when you're ready. Warm them in the oven at 180°C for 5–8 minutes until crispy – or use your air-fryer. Top with a crispy fried egg and chilli butter.

2. Sweetcorn potato salad
Crunchy, spicy warm potatoes mop up a vibrant coriander dressing, and you’ll love the bursts of sweetness from raw corn. This salad is also a great way to use up leftover roast potatoes.

3. Tomato salad with chilli crisp
This salad travels well – transport the chilli crisp in a jar and drizzle over the salad just before serving. It’s also delicious as a side to thinly sliced braaied fillet or lamb, along with crunchy toasted ciabatta to soak up all the umami-rich juices. It’s also really good at room temperature – so perfect for a picnic.

4. Green salad with goat's cheese
This impressive classic stars sweet-tart cranberries, tangy goat’s cheese, creamy avocado, crunchy seed mix and all of the leaves. Best of all, it’s ready in 10 minutes.

4. Fish taco salad
Woolies has done most of the work for you with this Instagrammable salad (great for midweek entertaining, too). The home-made sweet potato chips are easy to make, add crunch and and aren’t as heavy as nachos or wraps.

6. Chicken burger salad
Fill fresh Crunchita lettuce with the chicken and eat with your hands. If you don’t feel like making the crumbed chicken from scratch, keep a box of Woolworths' frozen crumbed chicken breast strips handy.
