6 game-changing recipes to use up that loaf of bread

1. Custard cups
These cheerful baked custard cups are inspired by traditional Portuguese pasteis de nata, but instead of flaky pastry as a base, I used slices of buttered white bread. I also added a generous amount of seasonal Honeygold citrus zest in both the custard and the sweet syrup that’s drizzled over at the end.

3. Spinach and broccoli soup with "fish bread"
I thought it was only my mother who had revolutionised bread in this way. On Fridays, we would have battered hake and chips for dinner and when there was batter leftover, my mom would dip slices of day-old bread into it to deep-fry. The crispy batter took on the flavour of the fish that had previously been fried in the oil and the bread was soft and steamy on the inside - delicious served with this spinach and broccoli soup.

5. Cranberry bread Welsh rarebit
This is my take on the Welsh rarebit, a dish that dates back as far as the 18th century. Essentially, it’s cheese sauce slathered onto thick slices of bread. I replaced regular bread with Woolworths' gluten-free spiced cranberry loaf. No bunnies were harmed in the making of this decadently cheesy brunch special!

These chewy white chocolate-and-tahini bread cookies were inspired by Jamie Oliver’s dark chocolate rye bread cookies and are reminiscent of old-school crunchies. It’s a genius way not to waste a crumb of bread, which gives them a special toothsome quality, while tahini and white chocolate give them a halva-like flavour.
