6 recipes that will transform your roast lamb leftovers

South Africans and lamb go together like fish and chips. Whether it’s a braai, a family gathering or festive table, lamb will always be present – but none of the cuts is more showstopping than the leg. Here are a few of my favourite ways to turn leftovers into dishes as heroic as the prime cut.
1. Lamb bone ramen
This is a great way to use every bit of your leg of lamb. Respect the whole animal!

2. Lamb banh mi
Traditionally, liver spread is used for this Vietnamese sandwich, but since lamb and anchovies are a flavour match, I’ve given this a South African twist by using smoked snoek pâté instead.

3. Lamb tacos
Tacos are a fun way to get the family involved with dinner by letting them build their own. Plus, they’re the perfect vehicle for leftovers.

4. Air-fryer crumbed lamb
The lamb can be coated in the crust well in advance. It crisps in 15 minutes when using the air-fryer, making this dish a perfect midweek dinner.

5. Lamb ragù with gnocchi
Adding olives to the ragù gives the dish depth, amplifying the meaty flavour and helping a little lamb go a long way.

6. Shepherd’s pie
This pie, topped with pastry rather than mash, can be assembled and frozen. When it’s time to bake it, simply remove it from the freezer and allow to thaw before placing in a hot oven.
