6 sensational seafood recipes
Flame-cooked sustainably sourced fish is taking centre-stage on Khanya Mzongwana’s braai menu this spring. Try her avo Ritz hake burger and snoek with not one, but two, new marinades.
1. Fish schnitzel
Quick-cooking angelfish is a low-cost fish with a delicious mild flavour. I’ve used Woolies’ angelfish with that delicious garlic-and-herb marinade for extra flavour.

5. Baharat-spiced hake
Baharat, or Middle Eastern/Lebanese 7-spice mix, delivers a deep, smoky sweet flavour, which adds depth to hake or anything you’re braaiing. I’ve taken some liberties with my version but all the important spices are there.

6. Yellowtail kedgeree
Kedgeree, a Scottish dish derived from the ancient traditional Indian rice dish khichdi, is one I don’t make often enough. Instead of smoked haddock, I’ve opted for extra-smoky braaied yellowtail and smoked mussels, which makes the dish really special.
