Egusi seed butter

- 140 g egusi seeds, plus extra for sprinkling
- 4 T canola oil
- 1 T brown vinegar
- 1 T brown sugar
- ¼ cup water (add as required)
- ½ t salt
- bagels, toasted, for serving
- honey, for drizzling
Method
Ingredients
1. Preheat the oven to 180°C. Place the egusi seeds on a baking tray and roast for 10 minutes, or until lightly browned.
2. Place all the ingredients including the seeds (set aside a few for sprinkling) into a blender and blend at full power until very smooth.
3. Spread on toasted bagels, drizzle with honey and sprinkle over the remaining egusi seeds.
